I’ve made this soup many times using oregano but IMHO it taste better with cumin in place of the oregano. Definitely add toppings, they make the soup come together nicely. I always want to watch the movie Tortilla Soup after having this soup!
1 onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon dried oregano
1 (28 ounce) can crushed tomatoes
1 (10.5 ounce) can condensed chicken broth
1 1/4 cups water
1 cup whole corn kernels, cooked
1 cup white hominy
1 (4 ounce) can chopped green chile peppers
1 (15 ounce) can black beans, rinsed and drained
1/4 cup chopped fresh cilantro
2 boneless chicken breast halves, cooked and cut into bite-sized pieces
2 cups crushed tortilla chips
1 sliced avocado
2 cups shredded Monterey Jack cheese
1/2 cup chopped green onions
In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
Stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.
Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.

There are many versions to that recipe.
El Pollo Loco Chicken (Citrus)
Serving Size : 4
1 Whole Chicken – cut pieces w/skin
1/3 Cup Lemon juice
1/3 Cup Lime juice
1/3 Cup Canola or vegetable oil
1 Teaspoon Ground turmeric
1/2 Teaspoon Garlic salt
1/4 Teaspoon Black pepper
Briefly simmer the cut-up chicken in a deep-sided skillet, keeping pieces
in single layer without crowding them, until the meat appears milkywhite
and the juices run clear, no longer pink. Allow to cool in the broth,
uncovered, while you prepare the basting sauce. Arrange the chicken pieces
skin-side up on broiler pan in single layer and baste with enough of
mixture to evenly coat skin side. Turn and baste other side. Turn again to
skin side up and broil 6" from the heat, brushing with additional sauce
every few minutes until skin is really crispy and golden brown,
approximately 5 to 8 minutes for large pieces.
BASTING MIXTURE-Mix juices,
oil, turmeric, salt and pepper. This makes enough to baste nine pieces.
EL POLLO LOCO FLAME-BROILED CHICKEN
2 cups water
4 teaspoons salt
2 teaspoons pepper
1 garlic clove
1 teaspoon yellow food coloring
1 whole frying chicken with skin, halved or quartered
1. In a blender, add the water, salt, pepper, garlic and food coloring. Process on high speed for 15 seconds.
2. Marinate the chicken in the liquid in a bowl or pan for 45 minutes. Turn and marinate for 30 minutes more.
3. Preheat a barbecue grill to medium-low grilling heat.
4. Cook the chicken on the open grill for 45 minutes to 1 hour, or until the skin is golden brown and crispy. Be sure the flames are not scorching the chicken, or the skin may turn black before the center is done. Lower the heat if necessary. (If you do not have a gas grill; you can spray a little water on the charcoal to keep the flames at bay.) Turn the chicken often as it cooks.
5. Cut the chicken into 8 pieces, with a large, sharp knife, cutting the breast in half and cutting the thighs from the legs.
Makes 8 pieces
El Polo Loco Chicken
1 c White wine vinegar
1 c Olive oil
1/2 c White wine
1 tbl. Oregano
1 teas. Thyme
3 tbls Salt
10 Garlic cloves – minced
1 1/2 teas. Tabasco sauce
Mix all ingredients and marinate two whole chicken which have been cut in half. Marinate several hours in refrigerator. Grill chickens slowly until done.

3/4 cup Heinz Chili Sauce
1 lemon, juice of
1 large orange, juice of
2 tablespoons vegetable oil
2 tablespoons vinegar
2 teaspoons sugar
2 teaspoons garlic powder
1 teaspoon worcestershire sauce
Tabasco sauce
4 boneless chicken breasts
For marinade, mix all ingredients, except chicken, together.
Add chicken and marinate for 4-24 hours.
Remove chicken from marinade; discard marinade.
Cook chicken on a hot grill for about 10 minutes on each side.
Serve with tortillas and salsa.
Time does not include marinating.
