Can someone help please? I am looking for a recipe (marinade) for Chinese Chicken Wings. These are the ones you would get as an appetizer at a Chinese Restaurant. These are fried. I have checked other web sites even asking the restaurant staff for the recipe. Of course they (the cooks) wouldn’t divulge it. I am sure there is soy sauce, garlic, and possibly ginger root in the recipe. Any help would be appreciated. Thank you so much.
I have several - here are some of what I’ve got - let me know how close these are for you -
1/3 cup soy sauce
1 tablespoon light brown sugar ; firmly packed
1/4 cup plum sake ; (you can also use regular sake or cream sherry)
4 tablespoons honey
1 teaspoon garlic powder
2 teaspoons ground ginger
1 tablespoon Hoisin sauce
1 teaspoon chili sauce
1 teaspoon chili oil
1/4 cup chopped green onions
Whisk all ingredients until combined. Stores very well in refrigerator.
1/4 cup soy sauce or tamari
2 tablespoons dark sesame oil
2 tablespoons rice vinegar
1 tablespoon minced garlic
1 tablespoon minced ginger
1 scallion, sliced thin ; about 2 tablespoons
ground ; black pepper to taste
Whisk ingredients together in a small bowl. Place meat, poultry, fish, or vegetables in zipper lock bag or in shallow, nonreactive pan. Pour marinade over contents and seal or cover. Turn zipper lock bag or stir contents of pan occasionally to evenly distribute marinade.

1/4 cup dry sherry ; not cooking sherry
1/2 teaspoon grated fresh ginger root
a ; touch of brown sugar
This is just the basic, you can also add finely chopped garlic, hot pepper oil, Tabasco, Sesame oil or chopped green onions. Mix all together and marinate your favorite meat.
1 teaspoon finely sliced fresh ginger
1/4 cup lemon juice
1/4 cup olive oil
1 green onion ; chopped
2 cloves garlic
2 tablespoons light brown sugar ; firmly packed
1/4 cup soy sauce
Combine marinade ingredients. Place in glass bowl or dish that will hold chicken in single layer. Add chicken; let marinate a minimum of 4 hours, turning.
Jar Doo Chicken Wings
1½ lbs chicken wings
2 tsp minced fresh ginger root
1 Tbsp dry gin
2 Tbsp water
2 tsp granulated sugar
½ tsp salt
4 Tbsp soy sauce
Vegetable oil for deep frying
In small bowl, combine ginger, gin, and water. Stir in sugar, salt, and soy sauce. Pour over wings and marinate 40 minutes. Drain wings.
In deep saucepan half-filled with oil, or in deep fryer, heat oil to 375F. Fry wings, a few at a time, until browned and cooked through, 10 to 15 minutes. Remove with slotted spoon, drain. Repeat with remaining wings.
