Chicken with Red Peppers over Angel Hair

This is pretty delicious - my son says he feels as though he is back in Italy when I make this - LOL!!!

Chicken with Red Peppers over Angel Hair

Taken from an Italian Cookbook – can’t remember the name - not my own recipe

Two Boneless Chicken Breasts
Three Tablespoons of flour
One tablespoon of Garlic Pepper or equivalent spice
Three cloves of garlic
Two tablespoons of olive oil
1 tablespoon of sun dried tomatoes
1 cup of red peppers
1 cup of green peppers
1 small zucchini cut into thin slices
¼ cup of white wine
Two cans of diced tomatoes – not drained

Cut up two boneless chicken breasts into very small cubes or strips
Dredge the breasts in the flour and garlic pepper mixture

Put the olive oil and garlic in a deep skillet
Cook the garlic in the olive oil for two minutes

Add the chicken and cook until done

Add the ¼ cup wine and use the liquid to get scrapings off of the bottom of the pan from the chicken that was cooked

Add to mixture:
Sun dried tomatoes
Red peppers
Green peppers
Zucchini - can eliminate
Cans of diced tomatoes

Cook until mixture boils and until the peppers and zucchini are soft

Pour over cooked angel hair pasta – about a cup for each serving
