chili pie

I haven’t made this in a while! But everyone will enjoy it!

Stew meat cut into 1/2-inch cubes (about 1 lb.) browned in Dutch oven and drained of fat. Use about 1 T. olive oil to fry meat in. Mince garlic and fresh parsley and add. Add just a touch of salt and pepper - not much.

Add 2 can mexican-style stewed tomatoes (14 1/2 oz. each) - do not drain

Add green and/or red bell pepper diced (about 1 c.)

Add a pkg. taco seasoning mix

Add 1 T. yellow cornmeal

Being to boil, reduce heat and simmer, uncovered, 20 minutes

Add 1 can (15 1/2 oz.) red kidney beans, drained

Using a 10-inch pie plate, line with bottom pastry crust; fill with mixture; sprinkle with 1/4 c.shredded cheese, top with top crust. flute edges.

Bake in preheated oven (350* F.) 30 minutes.

Remove from oven, sprinkle 1/4 c. shredded cheese over crust, return to oven and bake about 10 minutes longer.
