Chili Stuffed Chicken Breasts

4 whole chicken breasts, split, skinned and boned
6 Tbsp butter
1/2 cup cheddar cheese, grated
1/2 cup jack cheese, grated
2 Tbsp green onion, sliced
4 tsp green chilies, chopped
1/4 cup butter, melted
1 cup cheddar cheese crackers, crushed
1-1/2 tsp taco seasoning mix

Pound each chicken piece to flatten.

Combine 6 Tbsp butter with the cheeses, onions & chilies. Place a portion of mixture on one end of chicken piece. Roll up, tucking ends completely to enclose filling. Dip each in melted butter to cover.

Mix crackers and seasoning, then coat each roll with mixture. Arrange in a circle on a baking dish. Cover with waxed paper. Microwave on high 10-12 minutes, rotating dish after 5 minutes until done. Let stand 5 minutes before serving
