Chinese-Style Chicken or Turkey Bites

Servings: 32 bites

1 pound [454 g] chicken whites or turkey white, diced
1/4 cup [60 mL] soy sauce
1/4 cup [60 mL] Xeres or dry Vermouth
1 tablespoon [15 g] sugar
2 cloves garlic, chopped
1 tablespoon [15 mL] freshly grated ginger
or
1 teaspoon [5 mL] ground ginger
1 pinch Cayenne pepper



Arrange chicken or turkey dices apart nto a shallow glass dish.
Mix together soy sauce, Xeres or dry Vermouth, sugar, chopped garlic, freshly grated or ground ginger and Cayenne pepper.
Pour all over chicken or turkey dices; mix to coat well.
Cover and leave to marinate, refrigerated, for at least 4 hours.
Preheat oven broiler.
Thread chicken or turkey dices onto thin skewers.
Broil, 4 inches [10 cm] from heat source, for 2 minutes.
Turn skewers over; broil for approximately 2 minutes more, until no longer pink inside.
Transfer chicken or turkey dices onto a warm serving plate.
Serve hot or lukewarm, each bite pricked with a wooden pick.
