I have been making this recipe for months now and it doesn’t taste anything like chipotle’s chicken marinade. According to Chipotle they use Chipotle peppers with Adobo not ancho. Does anyone have an update to this recipe? or does the book (America’s Secret Recipes 1) have the correct copycat recipe?
yes I have, I’ve used chipotle peppers in adobo with the spices listed above and the taste was similar to Chipotle Mexican Grill but not the same and way hotter. I actually enjoyed it more
The ancho mix seemed to be a little bland. I honestly want the copycat recipe for it and would like to know what recipe the book has for this one
Use 3 -4 adobo canned chiles with the sauce or add more
1 T. cumin powder or to taste
lime juice 1 fresh squeezed
1 tsp. oregano
1 onion large sllces
1 bay leaf
4-6 to garlic cloves
1 T. paprika
black pepper
Mix it well…Remember those adobo peppers are hot n u can add some cayenne

For CHicken
3-4 adobo canned chiles with oil puree in processor or more for hotter
1 -2 T.cumin powder
Little splash ligt soy sauce no more than 1/4 c. is too much -unless u making lots.
lime juice -1 to 2 small fresh squeezed
Onion large sliced thin
garlic cloves 3 to 4
Cilantro’s fresh leaves only 1/2 handful chopped
1/8 tsp. Mexican oregano powder
dash of paprika
quick dash of chile powder

FYI Here is the “real” Chipotle marinade recipe.
Puree this up in a blender…
1/2 can of 7 ounce chipotles in adobo
4 cloves garlic
3/4 cup vinegar
1/2 onion
1/2 cup water
1/3 cup lime juice
4 teaspoons of cumin
2 tablespoons of paprika
1 tablespoon salt
1/2 teaspoon of black pepper
For Chipotle’s chicken, marinate chicken thighs
For Chipotle’s steak, marinate sirloin/new york strip steak
Let your meat sit in a marinating vessel of your choice, with a
lid for at least 8-12 hours. Grill to perfection and enjoy!

Thank you for the recipes, I have tried them all and the taste definitely improves but not quite the same flavor. I’m sticking with them for now until I secretly get the recipe from a local chef lol
Any way what kind of onions would you recommend I use? I use red onions but would like to know if I would experience a taste difference
