CHOCOLATE DREAM PIE
2 pkgs. (3 oz. each) cream cheese, softened
1 c. confectioners’ sugar
1-1/2 t. vanilla extract
1/2 c. plus 1 T. cocoa
1/4 c. milk
1-1/2 c. whipping cream (see Note for alternative)
1 prepared 9-inch pastry shell
Cream together softened cream cheese, sugar and vanilla with an electric mixer, letting the mixer run for 3 or 4 minutes on high speed. Gradually add cocoa alternately with milk, and beat until smooth. With the mixer running, gradually add whipping cream, and beat until mixture is stiff. Pile filling into a prepared pie shell, and chill for several hours or overnight.
NOTE: An 8-ounce container of thawed whipped topping may be substituted for the whipping cream. However, it must be gently folded into, rather than beaten into, the cream cheese/cocoa mixture.
CHOCOLATE COOKIE CRUST
2 c. crushed chocolate cookies (Oreos are great, but remove the centers)
3/4 c. melted butter
Preheat oven to 375* F. Combine crumbs and butter in a medium bowl and mix well. Firmly press mixture evenly into the bottom and up the sides of a 9-inch pie plate. Bake for 8 minutes. Cool before filling.
