Chocolate Mint Oreo Cookie Cups
1 box chocolate cake mix
2 eggs
½ cup oil
1 tsp mint extract
9 Mint Oreos
½ pkg Mint M&M’s
Preheat oven to 350 degrees F. Liberally grease 9 cavities in a standard muffin tin; set aside. Meanwhile, in a large bowl, combine the cake mix, eggs, oil and mint extract and blend until soft.
Take a cookie dough scoop and drop a rounded Tablespoon of dough into the bottom of each greased muffin cup. Press a Mint Oreo into the cookie cup, then top with another rounded Tablespoonful of dough. Use your fingers to tuck the cookie dough around the Oreo to seal it in a cup shape. Top with Mint M&M’s.
Bake for approx. 20-25 minutes or until centers appear set and edges are lightly browned. Cool for about 15 minutes in the cups before very gently removing them by running a butter knife around the edges. Cool completely.
