Chocolate Mint Sugar Cookie Drops
2 1/2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 cups sugar, divided
3/4 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 (10 ounce) package Andes crème de menthe chips
In medium bowl, combine 1 cup sugar and oil; mix well. Beat in eggs and vanilla extract. Gradually beat in flour mixture. Stir in chocolate morsels. Shape into balls using rounded teaspoonsful of dough. Roll in remaining 1/4 cup sugar.
Place on ungreased cookie sheets and bake at 350 degrees F for 8 to 10 minutes. Cool completely on wire racks. Makes 3 1/2 dozen.
