Even though I dislike the scurge of the garden, my wife likes it and is often asked for this recipe.
Recipe Name: CHOCOLATE ZUCCHINI BREAD
Serves: 4 - 6
3 Cups Flour
1/4 Cup Unsweetened cocoa
1 Tsp. Ground cinnamon
1 Tsp. Baking soda
1/2 Tsp. Salt
2 Cups Sugar
3 Large Eggs
1 Cup Vegetable oil
2 Tsp. Vanilla
2 Cups Grated zucchini
1 Cup Chopped nuts, optional
1 Cup Semi-sweet chocolate chips
1 Tsp. Baking powder
Heat oven to 350 degrees; grease 2 81/2 X 41/2 loaf pans
In a large bowl , beat together the sugar and eggs. Add the vegetable oil and vanilla. Stir in the zucchini (squeese out excess water first).
In a separate bowl, combine and mix well the flour, cocoa, cinnamon, baking soda, baking powder and salt. Then add to zucchinni mixture and stir until just moistened. Fold in the nuts and chocolate chips.
Spoon batter into prepared pans.
Bake 55-60 minutes or until wooden toothpick inserted in center comes out clean.
Cool in pans and cool completely on wire racks.
