Christopher's Spinach Parmesan - Copy

Christopher’s was a quaint little lake side restaurant in Oklahoma City that no longer exists. I was never big on spinach but this is a very good recipe.

CHRISTOPHER’S SPINACH PARMESAN

2 pkgs. (10 oz.) frozen spinach
2 slices bread
1/2 cup finely minced onion
1/2 cup margarine
3 eggs, well beaten
1 cup parmesan cheese
1/4 teaspoon thyme
1/4 teaspoon garlic salt
1/2 cup heavy cream

Thaw spinach, drain and squeeze dry.

Preheat oven to 400.

Chop spinach until there are no longer stems. Put into mix master. Tear bread into pieces and add with all other ingredients. Blend thoroughly. Lightly butter pan. Bake for 20 minutes.
