Chuck Wagon Bean Pot

Here is one that I’ve had for ages and it is old to we have this about every 3 or 4 months.

1 pound any variety of western dry beans
6 cups water
1 can (7-10 oz.) green chilie salsa
1 ham hock or shank
1 large onion 1 teaspoon salt

Sort and rinse beans. in a large pot bring all ingredients to a boil reduce heat and simmer gently, add enough boiling water to keep beans well covered, two to three hours. When beans are done, take out ham bone, cut off meat, and put it back in the beans simmer about 20 minutes. Serve with cornbread or corn muffins, any kind of meat.
