Chunky Monkey Cake

3 bananas, ripe
1 (18 1/2 ounce) package yellow cake mix
1 1/3 cups water
3 whole eggs
1/3 cup vegetable oil
2/3 cup walnuts, chopped
1/2 cup chocolate chips

Preheat oven to 350 degrees. Spray 2 9-inch round cake pans with cooking spray.

Peel 2 bananas and mash them up in a bowl. Add cake mix, water, eggs and oil. Beat on low speed of mixer until well combined, about 1 minute. Increase speed to high and beat until mixture is smooth, about 3 minutes. Chop remaining banana into 1/2-inch pieces. Using rubber spatula, fold bananas, chopped walnuts and chocolate chips into cake batter. Divide batter evenly between pans.

Bake at 350 degrees for 30 minutes or until toothpick inserted
in middle of cake comes out clean. Cool in pans about 10 minutes. Remove from pans and cool completely. Frost cake with your favorite chocolate frosting, putting icing between layers.

Passionfruit icing biscuits

2 cups of plain flour
1 tsp baking powder
180g cold butter chopped
1/2cup water
1 tbsp sugar

Passionfruit icing
1 1/2 cups icing sugar
30 melted butter
2 passionfruit

Preheat oven to 210C

Line 2 biscuit tin with baking paper.
Sift flour and baking powder into large mixing bowl.
Add butter stir until combined.
Then add water and stir until combined.
Turn onto lightly floured surface and knead for a minute or until smooth.
Roll dough into rectangle aproximately 20 x 40cm.
With the short end towards you, fold the ends over two thirds of the way along the rectangle.
Fold the other end over the top.
Roll the dough again to 40 x 20cm and repeat the procedure 5 times.
Roll dough again on lightly floured surface to a 30 x 30cm.
Sprinkle with sugar.
Fold the long sides to meet in the centre.
Fold in half lengthways.
Use sharp knife and cut 1cm.
Brush lightly with water and bake for at least 15 minutes or until lightly golden.
Transfer to wire rack to cool.

To make passion fruit icing.

Sift icing sugar into a medium mixing bowl.
Add butter and passionfruit pulp and stir until well combined.
Spread icing over the biscuits.
