I MADE A NEW REALLY AWESOME BREAD PUDDING TODAY, USING MY HOMEMADE WHOLE WHEAT YEAST BREAD:D:D.
CIN’S NEW MANDARIN-MARSHMALLOW BREAD PUDDING
6 C Homemade Whole Wheat Bread
3 C milk
1 C evaporated milk
3/4 C Splenda
1/2 C br. sugar Splenda
8 T melted unsalted butter
3 eggs (whisked)
1 1/2 to 2 T pure vanilla
1 (11 oz) can Sweet Harvest Mandarin Oranges in light syrup (drain and retain)
1 C Marshmallows (cut\quartered…you could use mini’s)
1 T cinnamon
1 T nutmeg
Preheat oven: Oven - 350 dF
Combine all ingredients together, carefully…kind of folding. Mixture should be very-moist.
Pour into large buttered\sprayed 9 X 12-inch baking dish (I used my lg-deep dish oval white corning baking dish).
Put pats of butter over the top and bake. Make sauce while bread pudding is baking.
Bake 1 hour, top will be golden.
Pour sauce over entire top while hot out of the oven, then put back in for 10 more minutes.
1/2 a stick of unsalted butter.melted
1 C powdered sugar
1 T pure vanilla
3/4 to all of the juice you retained from the Mandarin oranges
Melt butter, add rest of ingredients. Stirring to mix well. Pour over hot baked bread pudding and place back in oven for approximately 10 more minutes, (juicy sauce should all absorb into the bread pudding).
