City Chicken

This is a recipe my mom used to make many years ago. It goes really well with mashed potatoes and a vegetable.

CITY CHICKEN

1 lb. veal
1 lb. pork
1 lb. beef
1 teaspoon salt
black pepper
1 1/2 teaspoon milk or water
1 egg beaten
1/2 cup crushed saltine crackers
1/4 cup butter

Cut meat into cubes. Sprinkle with salt and pepper. Arrange meat on small skewer’s - alternating veal, pork, and beef (about six pieces of meat per skewer). Dip skewer into mixture of egg, water/milk. Roll in the cracker crumbs. Brown in melted butter. After browning, remove from fry pan. Fill fry pan with water. (Now here is the tricky part. My mom used to have a fry pan that had sort of a steamer rack in it, but I have never been able to find one. So instead, I use a grease spatter screen as my steamer rack.) Place the skewers on the spatter screen and cover. Steam for about one hour, adding water if necessary.
