Coconut Bread

Very good warm with lots of Butter (not the artificial spread…lol) After what Kitchen Witch had to say, I’m butter all the way!!

3 c. flour
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
2 c. sugar
1 c. oil
4 eggs, beaten
2 t. coconut extract
1 c. buttermilk
1 c. coconut
1 c. chopped pecans

Combine flour, baking powder, baking soda, and salt; set aside. in a large bowl, combine sugar, oil, eggs, and extract. Add dry ingredients alternately with buttermilk. Stir just until moistened. Fold in coconut and nuts. Pour into 2 greased and floured 8 -1/2 x 4-1/2 x 2-1/2 in. loaf pans. Bake at 325 for 1 hr. or till done. Cool 10 min, then finish cooling on a wire rack.
