Coconut Cream Muffins
2 eggs
1 tbsp rum
1 cup coconut cream (can buy in market)
1 cup coarsely shredded coconut
2 tsp baking powder
1/2 cup sugar
1-3/4 cup flour
Preheat oven to 400F & prepare pans. Put the first 6 ingredients into a
bowl & mix well.
Add the dry ingredients & blend until just mixed. Spoon into pans,
sprinkle a little coconut on top of each muffin & bake for 15-20
minutes.
YIELD: 12 muffins
