yes please post the recipe I am originally from Colorado and i always have told everyone out here in Los Angeles that Colorado Mexican food is different than Mexican food in California. To me Colorado Mexican food is so much better!! A southwest flavor mmm.
Flatten or butterfly your chicken breast. Add a breakfast sausage size lump of a mixture of minced green onion, cream cheese and shredded cheddar cheese. Fold like a burrito, 'cept tuck the ends under to keep the cheese from running away. Cover with your favorite red chili recipe or store bought salsa. Bake 40-45 minutes until the chicken is cooked. If the cheese starts sneaking out: IT’s DONE!
