Confetti Rice

1 pound bacon, diced
2 cups long grain rice, cooked
2 cups diced carrots, parboiled
2 cups diced celery, parboiled
1 cup green peas
Soy sauce, optional

In a large skillet, cook bacon until crisp. Remove to paper towel, drain all but 1/3 cup of the drippings. Add rice, carrots, celery and peas to the drippings; cook until heated through, about 5-7 minutes. Stir in bacon. Serve with Soy sauce if desired.

This a good dish with any kind of meat you desire.
