COOKING FOR A CROWD - FRESH TOMATOES AND CUCUMBERS

8 pounds tomatoes
5 pounds cucumbers
1/2 cup chopped fresh basil
1/2 cup chopped fresh parsley
2 1/2 cups italian salad dressing
basil, fresh, whole leaves, for garnish

  1. Slice tomatoes and cucumbers 1/4 inch thick. Alternate tomatoes and cucumbers, slightly overlapping, on a serving platter.

  2. Sprinkle basil and parsley over tomatoes and cucumbers.

  3. Drizzle evenly over tomatoes and cucumbers. Garnish with fresh basil leaves and serve immediately.

Notes: Cucumbers may be scored with tines of a fork before slicing. Cucumbers may be peeled or unpeeled.

VARIATION:

Sliced Tomato and Mozzarella Salad. Substitute 4 lb low-fat mozzarella cheese slices for cucumbers.
