Mimi’s Cafe Carrot Bread Mix
1 1/2 C flour
1 tsp. baking soda
2 tsp. cinnamon
1 1/2 C brown sugar
1/2 C walnuts - chopped
1/2 C raisins- softened in hot water & drained
Layer or mix ingredients together & package.
Instructions:
3 eggs- beaten
1/2 C canned crushed pineapple- juice drained
1 C vegatable oil
1 C carrots finely shredded
- If mix ingredients are layered, mix together well in a large mixing bowl.
- In a separate bowl, whisk together the eggs & oil- smaller bowl.
- Stir liquid mix into flour mix
- Add carrots, pineapple, walnuts & raisins, & stir again.
- Grease & flour a 9" pan or 4 mini-loaf pans filling 2/3 full with batter.
- Bake 350 degrees 40 minutes (mini loaves- 30 minutes)
Yield 1 square 9" pan or 4 - 3x6 mini loaves.
