I’m sure someone has done something like this and probably has a different name for it, but here goes…
Corn Delight
Makes 8 servings
Vegetable Side Dish
2 eggs
1/2 cup melted butter
1 cup sour cream
10 ounces whole kernel corn
10 ounces cream-style corn
1 box Jiffy Corn Muffin Mix
16 ounces shredded cheddar cheese
Beat eggs; add melted butter, sour cream and corn. Mix well.
Fold in corn mix.
Pour mixture into a greased cake pan.
Sprinkle cheese on top.
Bake uncovered at 350 for 30-40 minutes.
This recipe works well if you experiment with the amount of corn and cheese. My wife does a great job with it, but has admitted to not following the recipe to the letter. Hope you enjoy this as much as I do.
