Corn Fritters

2 cups whole kernel corn, well drained
1 cup all purpose flour, sifted
2 eggs, separated (yolks/whites beaten searately)
1/2 cups milk
1/4 tsp salt (opt)
2 tsp baking powder

Mix all ingredients except beaten egg whites and blend thoroughly. Fold in egg whites last. Fry in deep fryer in a wire basket. To fry on a griddle on in a skillet, add 1/2 cup more milk. Makes approximately 18 fritters.

I like fritters - have you tried making these with mexicali corn?? They are good with that too.
