Amount Measure Ingredient – Preparation Method


1 cup flour
1 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
1/2 cup sugar
3 large eggs – beaten
1/2 cup buttermilk
1/2 cup milk
1/4 cup butter – melted
1 teaspoon vanilla extract

Preheat oven to 425 degrees F.
spray a 9-inch round cake pan with non-stick cooking spray and lightly flour.
Mix flour, cornmeal, baking powder, salt and sugar in a medium bowl. In a seperate bowl, combine eggs, buttermilk, milk, butter and vanilla; stir well. Add egg mixture to dry ingredients; stir just until ingredients are moistened. (Do not overmix).) Pour batter into prepared pan and bake 20 to 25 minutes until golden in color. Remove from oven and invert onto round plate. Carefully remove from plate and cool on wire rack.

This looks really delicious. My family loves cornbread.

If you like your cornbread with a nice crispy edge, put a couple tablespoons of bacon grease in a cast iron skillet and preheat it until really hot, and then pour your batter in and return to the oven to bake as usual. Sometimes I add shredded Cheddar cheese and/or finely minced jalapeno peppers without the seeds.
