Cornish Hen for Two
Well-suited for a romantic dinner for two.
2 tsp hard margarine (butter browns too fast)
1/4 cup chopped onion
1/4 cup chopped celery
1-1/2 cups small bread cubes
1/4 tsp salt, scant measure
1/16 tsp pepper
1/4 tsp poultry seasoning, generous measure
1/2 tsp chicken bouillon powder
1/3 cup applesauce
1 Cornish hen, about 1 lb (454g) (see Note)
1/4 cup applesauce, for glazing
Stuffing: Melt margarine in frying pan. Add onion and celery. Saute until tender-crisp. Remove from heat.
Add bread cubes, salt, pepper, poultry seasoning, bouillon powder and first amount of applesauce. Stir. Add more applesauce if needed. Stuffing should hold together when a handful is squeezed.
Spread stuffing in bottom of small roaster. Lay Cornish hen halves, cut side down, over stuffing. Cover. Bake in 375 F oven for 45 to 60 minutes.
Remove cover. Brush with remaining applesauce. Continue to bake, uncovered, for 15 to 20 minutes until tender and glazed. Remove to dish. Keep warm.

NOTE: Have your butcher or meat department personnel cut frozen hen in half down the middle. Thaw just before baking.
