Country Vegetable Soup

I got this recipe from my Sister-In-Law I asked her why she hasn’t given it to before now she said she just found it in her old recipes stuck between some pages. She has made this a number of times when her boys were babies and that’s been about 57 years ago.

And Streak-of Lean is nothing more than salted pork it is so salty that you have to rinse it off under very hot water. All Veggies are fresh Summer. In the winter months use frozen veggies except for italian tomatoes use large can’s. And fresh cabbage, potatoes,onion and chicken stock mixed with part of the water.

2 cups Butter Beans (Lima Beans)
2 cups black eyed peas or other like purple hull
2 cups green beans
2 cups yellow squash or other squash
2 cups corn cut off the cob
2 cups tomatoes with skins removed
2 cups sweet onion, chopped
2 cups green English peas
2 cups cut okra
2 cups chopped green or red cabbage
2 cups chopped potatoes

1 square salted pork, rinsed and scored just about to the bottom of rind
6 quarts of water or more if cooks down to much
Black pepper to taste

Boil the salt pork until just about done. Add rest of ingredients let come to a rolling boil them let it simmer for about 3 hours, add the cabbage and potatoes the last 20 minutes of cooking, then add the cut okra the last 10 minutes of cooking. The salted pork makes this soup salty DO NOT ADD ANY SALT.

Let cool and refrigerate over night. Take out the next day and skim off all of the fat that has risen to the top. Heat and enjoy with some crackling corn bread !!!

If you like it hot add some hot peppers (of your choice) to it while cooking.

Harvest Soup:
This is something I just threw together one afternoon.

1 lb. of hamburger
1 large onion chopped
2 cloves of garlic chopped
1 TBS of garlic powder
1 TBS of onion powder
1 cup of chopped celery
4 cups of chicken or beef stock (can use bouillon cubes or granules)
1 tsp of pepper
1 tsp of salt

Brown hamburger (for those of us watching our waist lines, drain fat) if you drain the fat, add 1/2 cup chicken or beef stock. Add chopped onion and garlic, mix well. Let simmer for 10 minutes. Add garlic and onion powder and chopped celery, mix well about 2 minutes. Add chicken or beef stock, cover and simmer about 10 minutes. Add pepper and salt. During simmer time, prepare the following vegetables.

2 peeled and cubed potatoes
1/2 cup of frozen corn (or canned)
1/2 cup of carrots (chopped or sliced thin)
1/2 cup of frozen peas
1 10 oz can diced tomatoes (I prefer to use canned tomatoes that have other vegetables like garlic and basil, or onion and garlic).
1 large can of regular diced tomatoes.

Add all vegetables to pot. Put heat on low and cook for about 45 minutes, checking texture of vegetables.

I usually make this on a cold day with “clover rolls”.

Sounds very good and hearty. I will have to try this sometimes like maybe Friday as it is going to be cold here. Will let you know how it taste.
