Crab Imperial

This was one of my mothers recipes and it is very good I have revised it some what.

1/2 cup sweet butter
1 teaspoon grated sweet onion
1/2 cup flour
2 cups milk
1/2 cup cream
3 egg yolks
2 Tablespoons chopped fresh chives
2 Tablespoons chopped flat leaf fresh parsley
2 Tablespoons chopped fresh mushrooms(broiled in butter)
salt and pepper to taste
1/2 teaspoon paprika
1 teaspoon Worcestershire sauce
3 Tablespoons sherry
1 teaspoon stone ground mustard
1 pound crab meat, not immation
2 egg, hard boiled, chopped
buttered bread crumbs
grated Parmesan cheese

Melt butter: add grated onion and flour. Mix and gradually add milk and cream. Stir until thick and smooth. Mix in egg yolks and chives, parsley and mushrooms. Stir until thick and smooth. Season with salt and pepper, paprika. Worcestershire sauce, sherry and mustard. Heat but do not boil and add crab meat and eggs. Fill 6 crab shells or small ramekins. Sprinkle with bread crumbs and cheese. Bake until bubbly and light brown. Serve at once.
