Cracker Barrel Pancakes

Since the instructions are a bit sketchy and the recipes in previous post was written by someone who doesn’t have the slightest idea on how to cook I will remind you not to over mix your batter, mix to combine liquid and dry ingredients, there will be small lumps when done mixing. To cook the pancakes after placing batter on hot griddle or in hot skillet let pancakes cook undisturbed until bubbles appear on the surface and the edges appear dry around the pancake. Then flip the pancake and cook second side about half the time you did for first side.

2 Cups sifted all-purpose flour
2 baking soda
1 Teaspoon salt
1 heaping tsp sugar
2 eggs
2 Cups buttermilk

In a large bowl beat all of the ingredients with a spoon. Using a 1/4 cup
measure cup pour batter onto a lightly oiled hot griddle.

Serve with real butter & real maple syrup

How much baking soda is in this recipe?

My guess would be 2 tsp baking soda. For even lighter pancakes, separate the eggs. Beat the whites to stiff, but not dry, peaks. Mix all the ingredients together except the egg whites. (Don’t over mix or you will get tough pancakes.) Gently fold in the beaten egg whites and cook on a hot griddle.
