Barbecued Stuffed Patties

1/2 cup saltines (crushed)
1/3 cup barbecue sauce
2 tablespoons sliced green onion
1/4 teaspoon pepper
1 pound lean ground beef
8 dill pickle slices

  1. In large bowl stir together crackers, barbecue sauce, onion and pepper. Add ground beef. Mix well. On wax paper shape into 8 thin patties about 3 1/2-inches in diameter.

  2. Top four patties with pickle slices. Place remaining patties on top of pickle. Seal edges, completely enclosing pickle.

  3. Grill directly over medium heat for 11 to 13 minutes or until no longer pink, turning once.

Less Meat Loaf

12 ounces Morningstar Farms? Grillers® Burger Style Recipe Crumbles
8 ounces lean ground beef
1 carton (4 oz.) Morningstar Farms® Scramblers® egg substitute
3/4 cup fat-free milk
2/3 cup finely crushed saltine cracker crumbs
1/2 cup chopped onion
1/4 teaspoon black pepper
1 cup ketchup
1/2 cup firmly packed brown sugar
1 teaspoon Worcestershire sauce

  1. In large mixing bowl, combine first 7 ingredients. Mix well. Shape into a loaf in ungreased loaf pan.

  2. Combine remaining ingredients to make a sauce. Spread over top of loaf.

  3. Bake at 350° F for 65 minutes; drain off any liquid. Let stand 10 minutes before slicing.
