CRANBERRY APPLE BREAD

1 ½ c. flour
1 ½ t. baking powder
½ t. baking soda
1 t. cinnamon
2 c. peeled and chopped apples
2 T. vegetable oil
3/4 c. sugar
¼ c. egg beaters or eggs
¼ c. nonfat plain yogurt
1 c. fresh or frozen cranberries
½ c. chopped walnuts (optional)

Preheat oven to 350* F. Coat 9 X 5-inch loaf pan with spray. Combine dry ingredients. Toss apples in oil; sprinkle on sugar, stir to blend. Mix in eggs and yogurt; add dry ingredients, stirring just until moistened. Gently food in cranberries and walnuts. Spoon into pan. Bake 1 hour or until toothpick inserted in center comes out clean. Let stand in pan 10 minutes; remove from pan and cool completely.
