CRANBERRY PORK ROAST
1 (4- to 5-pound) pork roast
1 (12 ounce) bag whole cranberries
1 cup cranberry juice
2 medium onions, cut into quarters
1 packet dried onion soup mix
Place pork roast in crockpot and top with whole cranberries,
reserving 1/2 cup. Pour in cranberry juice and add onions. Sprinkle
packet of dried onion soup mix over all. Cook on LOW for 8 hours.
Remove roast, onions and cranberries to platter. Garnish with
reserved cranberries for additional color.
Serves 8 to 10.
