Cranberry Sauce Loaf
1/2 cup vegetable shortening (Crisco)
1 cup granulated white sugar
1 1/2 cups chopped pecans, optional
1/2 cup raisins, optional
1 3/4 cups sifted flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teasspoon ground cinnamon
1/2 teaspoon ground cloves
1 (16 ounce) can cranberry sauce
Cream shortening and sugar together. Heat oven to 350 degrees. F.
Grease and flour well a 9 x 5 inch loaf pan. Beat in egg well.
Stir in pecans and raisins if using. Combine dry ingredients and slowly add to the creamed mixture. Stir small amounts of cranberry sauce in at a time and very well. Place in loaf pan and bake 40 to 50 minutes.
