Cranberry Sauce Loaf

1/2 cup vegetable shortening (Crisco)
1 cup granulated white sugar
1 egg
1 1/2 cups chopped pecans, optional
1/2 cup raisins, optional
1 3/4 cups sifted flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teasspoon ground cinnamon
1/2 teaspoon ground cloves
1 (16 ounce) can cranberry sauce

Cream shortening and sugar together. Heat oven to 350 degrees. F.
Grease and flour well a 9 x 5 inch loaf pan. Beat in egg well.
Stir in pecans and raisins if using. Combine dry ingredients and slowly add to the creamed mixture. Stir small amounts of cranberry sauce in at a time and very well. Place in loaf pan and bake 40 to 50 minutes.

This was absolutely disgusting. I just made it and had to throw it out. Couldn’t eat a bite of it because it didn’t cook properly. After leaving it in the oven for 65 minutes total, and I have a convection oven, I finally took it out. It was all gooey inside, had set, didn’t cook. Honestly, it was a COMPLETE waste of good ingredients!
