CREAM OF CAULIFLOWER SOUP

CREAM OF CAULIFLOWER SOUP
SERVES 4

2 T. olive oil
1 med. onion, chopped
5 - 6 ½ c. cauliflower florets
2 c. vegetable broth - preferably made with vegetable bouillon cubes
1 c. milk, more if needed
½ t. coriander
½ t. salt
¼ t. pepper
2 T. fresh snipped chives or parsley

Heat oil; add onion and cook, until tender. Immediately stir in cauliflower. Add broth, milk and seasonings. Bring to a boil; reduce heat and simmer 25 to 20 minutes, until cauliflower is soft. Cool 15 minutes. Blend in batches until smooth. Add more milk if too thick. Top with chives to serve.
