Creamed Cauliflower

This is a unique way to serve low-calorie cauliflower when there is an abudance of it in your garden or in the grocery store. This is such a light main dish, so serve it alongside a spicy bread or a salad. Try this recipe with all of our favorite vegetables. You can even add small amounts of leftovers such as cooked brown rice, grated cheese, or couscous or other cooked cereals.

Serving Size: 1 cup

Ingredients:

fresh cauliflower - 1 1/2 lb
butter granules or butter buds - 1/4 tsp
chopped fresh parsley - 1 tbsp
low-fat cottage cheese - 1 cup

  1. Cook, drain, and mash cauliflower. Combine with the rest of ingredients.

  2. Spoon into baking dish coated with nonstick cooking spray. Bake at 350 degrees F for 30 minutes.
