Creamed Virginia Country Ham

A very easy way to use up leftover ham and so simple to make. A quick tummy warmer on a cold day - ham in a cream sauce that you can serve over biscuits, toast, cornbread, etc. This would even taste good over cooked noodles, tortellini, cous cous, or rice. Try adding peas!
3 TBSP butter
3 TBSP minced onion
3 TBSP green pepper
3 TBSP flour
1 1/2 -2 cups milk
1 cup chopped Virginia country ham
1 TBSP chopped parsley or chives
1/8 tsp paprika
2 Tbsp dry sherry
In a skillet melt the butter over medium heat,and sauté the onion and green pepper until light brown. Sprinkle in the flour and stir a few minutes. Add the milk slowly, stirring constantly. Add the ham and simmer, stirring until thickened. Remove the pan from the heat and season with the remaining ingredients. Serve over hot buttered toast, English or corn muffins or corn bread.
