Creamy Coconut Chicken

Spice up dinnertime with this deliciously exotic recipe quick and easy to prepare, and it tastes amazing

1 tbsp ground almonds
1 tbsp desiccated coconut
175g/6oz fromage frais
100ml/31/2fl oz coconut milk
1 tsp chilli powder
1 tsp ground coriander
2 tsp fresh ginger, grated
1 tsp garlic, crushed
Salt and pepper to taste
1 tbsp vegetable oil
375g/13oz chicken breasts, cubed
1 red chilli, chopped and seeds removed
2 tbsp fresh coriander

1 In a pan, fry the ground almonds and desiccated coconut without oil until they go a shade darker.

2 Transfer the mix to a bowl, and add the fromage frais, coconut milk, chilli powder, ground coriander, ginger and garlic. Stir well. Add the salt and pepper.

3 Heat the oil in the pan. Add the cubed chicken breasts and stir- fry for 2 mins.

4 Pour in the coconut milk mix and blend together. Lower the heat. Add red chilli and fresh coriander.

5 Cover and cook for 10-12 mins. Stir and cook uncovered for a further 2 mins or until chicken is cooked through.

Serve with rice.
