Creamy Plain, Honey Orange or Maple Yogurt Cheese
Comments: For a change, try mixing in 2/3 cup [160 mL] honey + 1 teaspoon [5 mL] grated orange rind, or 2/3 cup [160 mL] maple syrup.
4 cups [1 L] plain gelatine-free starch-free yogurt Sugar, to taste Vanilla, to taste Fresh berries or fruit pieces, to taste Icing sugar, to taste Line a 6-inch [15-cm] sieve with 2 thickenesses cotton cheese over a deep bowl. Spoon in yogurt. Cover the bowl then leave yogurt to drip overnight, refrigerated. Throw away the liquid in the bowl. Transfer the 'cheese' in the cotton cheese into a smaller bowl. Just before serving, mix together some sugar and vanilla. Mix into creamy yogurt cheese. Spoon approximately 1/3 cup [80 mL] yogurt cheese into an individual dessert bowl or plate. Serve, each serving garnished with fresh berries or fruit pieces. Sprinkle with icing sugar, and serve.
