Crispy Honey Chicken
5 boneless, skinless chicken breasts
1/4 cup honey
2 tablespoons balsamic or wine vinegar
1 1/2 cups dry breadcrumbs
Salt and pepper chicken. Combine honey and vinegar in a shallow pan;
mix well- using a fork makes it easier. Place breadcrumbs in another
pan. Dip each breast in the honey mixture, then in the breadcrumbs,
being sure to coat both sides. Place in pan that has been sprayed with
nonstick spray or coated with a couple of tablespoons vegetable oil.
Bake for 40 minutes at 375 degrees, or less if chicken breasts are thin.
