Crock Pot Carrot Cake

Ingredients:

1 1/2 c. flour
3/4 c. sugar
2 large eggs
1/4 c. water
1/3 c. vegetable oil
1 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1 c. grated carrots

Directions:

Combine all ingredients in a 2 quart mixing bowl ***by hand. Spread batter in greased 2-3 1/2 quart slow cooker. Cover and cook on low heat for 2 hours, or until firm in the center. You can lightly jiggle the covered cooker to check firmness.

Top with cream cheese frosting

Note: This is the easiest carrot cake ever and it comes out very moist. **Important - you must mix ingredients by hand for this to work correctly.

Most baked goods are done when their internal temperature reaches 190-F to 200-F. Most crock pots/slow cookers reach 205-F, so you can bake in them. Things will not brown, however, browning happens at 325-F.
