This is really a yummy meal…easy too. I usually fix the night before and pop it into the crockpot before I leave for work.
Pork Chops and Potatoes in Mustard Sauce
6 - 8 pork loin chops
2 T. vegetable oil
1 can (10 3/4 oz) cream of mushroom soup
1/4 cup chicken broth
1/4 cup country dijon-style mustard
1/2 tsp. dried thyme leaves
1 clove garlic, minced or 1/3 tsp. garlic powder
1/4 tsp. black pepper
5 medium-sized potatoes, peeled and cut into thin slices
1 onion, sliced
In skillet, brown pork chops on both sides in hot oil. Drain fat.
In any size Crock pot slow cooker, mix soup, chicken broth, mustard, thyme, garlic and pepper. Add potatoes and onion, stirring to coat. Place browned pork chops on top of potato mixture. Cover and cook on Low for 8 - 10 hours or on High 4 - 5 hours.
