Crunchy Creamy Chicken Salad Sandwiches
1 cup cooked, chopped chicken
1/4 cup chopped walnutes or pecans
3 tbsp. mayonnaise
3 tbsp. plain nonfat yogurt
2 tbsp. finely chopped celery
2 tbsp. peeled, seeded, finely chopped cucumber
12 seedless red grapes, quartered
1/4 tsp. salt
1/4 tsp. pepper
8 slices whole wheat or multigrain bread
Stir together the chicken, chopped peanuts, mayonnaise, yogurt, celery and cucumber in a medium bowl until well mixed. Fold in grapes. Season with salt and pepper. Line 4 slices bread with lettuce leaves. Spoon chicken salad over and top with remaining slices of bread.
Makes 4 sandwiches.
