Crunchy stuffed olives with 3 meats

CRUNCHY STUFFED OLIVES WITH 3 MEATS

Giant green olives (pitted)
Flour
Bread crumbs
Eggs

For the olive stuffing:
½ # ground beef
½ # ground veal
½ # ground pork
3 oz. grated parmesan cheese
1 slice of white bread crust off, soaked in chicken stock
Grated lemon zest
Nutmeg - I leave this out
½ onion chopped
3 cloves chopped garlic
1 oz. white wine or chicken broth

Sautéed garlic and onion in olive oil , add the 3 meats and let cook , add the white wine and let it evaporate , add the bread soaked in chicken stock , lemon zest , nutmeg . Cool off the mix and stuff the olive, roll in flour, eggs, and bread crumbs, deep fry at 325* F. until golden. Serve with lemon wedge.
