Crusty Tuna Balls

Serves 4-6

1-cup Kellogg’s Corn Flakes
370g canned tuna
2-eggs, lightly beaten
1-cup stale bread crumbs
½ cup low fat mayonnaise
1/3 cup almonds, toasted and chopped
2tsp. Dijon mustard
1tsp salt

Preheat oven to hot (230oC)

Mix all the ingredients in a bowl.

Shape tablespoons of mixture into balls then roll the balls in 1 cup Corn Flakes that have been lightly crushed.

Place the tuna balls on a greased oven tray and bake in a hot oven for about 10 minutes or until browned lightly. Serve with lime wedges, if desired.
