I had the most delicious cucumber jelly on Saturday and would love to know if there are any recipes that sound like this one. It was tinted green, was sweet and had a nice mild cucumber and mint flavour. It was for toast and was delicious. can anyone help?

Thanks for checking. It was delicious and was homemade at a family owned restaurant. I have found some that want vinegar but this had no vinegar. I bet it had liquid pectin tho and there were no small pieces of cucumber either.
