1 cup finely chopped, peeled and seeded cucumbers
½ tsp salt
2 tsp sugar
1 tbsp cider vinegar
1/8 tsp freshly ground pepper
½ cup heavy cream, whipped
Combine cucumbers and salt. Let stand at least 1 hour.
Drain cucumbers and mix with sugar, vinegar and pepper.
Just before serving, fold in the whipped cream.
Serve over fish.
