Cucumbers and Radishes in Sour Cream

2 large cucumbers, peeled and very thinly sliced
1 bunch radishes, very thinly sliced
1-1/2 teaspoons salt
1 cup dairy sour cream
½ envelope Hidden Valley Ranch Dressing
2 tablespoons lemon juice
1 tablespoon finely chopped onion, or 1 teaspoon instant minced onion*
2 tablespoons chopped dill pickle
1/4 teaspoon sugar
Dash pepper
5 radishes, thinly sliced
1-1/2 teaspoons finely chopped parsley

  1. Lightly toss cucumbers with 1 tsp salt; refrigerate until well chilled.

  2. Meanwhile, combine sour cream, ranch dressing, juice, remaining salt, onion, dill pickle,
    pepper, and radishes.

  3. Toss cucumbers with cream mixture; refrigerate.

*Soak 1 teaspoon instant minced onion 2 teaspoons water for 5 minutes before
using.

NOTES: The amount of dill pickle above comes out a little strong. I think in the future, I’ll use half the amount and add some dill weed. I also added 1/3 cup real mayonnaise which helped to round out the flavor and add creaminess. Shane
