Curried Acorn Squash

2 medium acorn squash
½ tsp salt
¼ tsp black pepper
½ cup apricot preserves
¼ cup unsalted butter, melted
1 ½ tsp curry powder

Microwave the Acorn Squash for at least 10 minutes or until they are fork tender. In a small bowl, combine apricot preserves, butter, curry salt and pepper. Mix well. Spoon the apricot mixture into each squash. Bake for at least 15 minutes in a 350-degree oven.
