Date Squares

1-3/4 cups quick oats (uncooked)
1-1/2 cups flour
3/4 cup butter
1/4 tsp baking soda
1 cup brown sugar

Filling:

2 or 2-1/2 cups dates, chopped
1/2 cup sugar or 1/4 cup blackstrap molasses (depends how sweet you like it)
1 cup fresh orange juice (not from concentrate)
1 tsp vanilla

Combine ingredients for filling. Simmer until thick and mushy, being careful that mixture does not burn. Cool.

Preheat oven to 375 F. Lightly grease a 9x9-inch pan.

Sift soda with flour. Combine flour, brown sugar and oats. Work in butter with fingertips. (Part shortening may be used, but butter gives better flavour and browning.) Pat half of this mixture into pan.

Spread date filling over layer of oat mixture. Then pat other half of oat mixture on top.

Bake in quick moderate oven (375 F) for 45 minutes. Cut in squares when cool. Makes 20 squares.
