Dear Abby’s Raw Apple Cake with Caramel Glaze
1 cup butter (2 cubes), softened
2 cups granulated sugar
4 cups very coarsely grated green apples, drained (5 or 6 apples)
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup butter (1/2 cube)
1/4 cup half & half
1/4 teaspoon vanilla
Preheat oven to 350ºF.
Spray 13x9x2-inch baking dish with Pam. In large bowl, beat together butter and sugar. Add eggs and half of the apples, mixing well. Sift together dry ingredients. Stir in half of the flour mixture. Add remaining apples, mixing well. Add remaining flour mixture, stirring until blended. Do not overbeat.
Pour into prepared baking dish. Bake for 45 to 50 minutes, or until toothpick inserted in center comes out clean. Allow cake to cool about 30 minutes.
In heavy saucepan, combine glaze ingredients; mix well and bring to a boil. Allow mixture to cool about 20 minutes; pour over top of cake.
